Wee See

A while back I saw these videos and thought they were pretty cool so I bookmarked them. Today I got a chance to view them with Levi {and then with the other boys}. They are fun to watch and I like the design. Levi watched the whole clip below {that's a whole 7 minutes and 40 seconds of a still baby}! Nine Months


My lil' baby punk is already nine months old. I forgot his birthday though. Or, actually, when his birthday was. For quite a few days {or maybe longer} I was thinking his birthday was the 21st. It's not. It's the 19th. MY NIECE was born on the 21st. I didn't realize I had missed his 9 month birthday until my sister questioned me stating that Levi's birthday was the 21st. What?!! Something happens to your brain the second you become pregnant. And you are never, ever the same. You are lucky if you remember your name, let alone your children's names, ages, birthdays....
Levi is still the happiest little guy. He's always smiling and laughing. Or {happy} yelling quite loudly. I think he just likes to hear himself. It's a bit out of control sometimes. He also has a new laugh - a very I-like-to-hear-myself-make-noises type of laugh. {Check out the video below} He's crawling all over the place now. And trying to open cupboard doors. And wrecking his brother's train tracks. He seems to be following in Malacai's footsteps of mischievousness.
He's got two bottom teeth, although I think he's going to be sprouting another new one any day. His sleeping is still not great. We get a night every now & then when he sleeps through, but it seems like most nights, we're getting up with him. Ugh, so rough on this momma who needs so much sleep. {Which is what I should be doing now instead of blogging...}





He's so hard to take photos of now. He's always rolling over or crawling off.

Mooies on Etsy



I'm excited to announce the launch of my Etsy shop, Mooies! I will be selling vintage children's clothes and hopefully sometime soon in the future other vintage children's goods like shoes, toys, and miscellaneous items. (I still have lots to keep adding to my shop - so keep checking it - I'll have new items as often as I can find time to add them...which isn't much - three little boys = very little time!). Spring Tease

Oh sweet warm weather. It was nice to see you in these parts. Even if you were here just to tease - because we know you just won't stay. Even now as I type, I can hear you blowing away (and almost feel you blowing away - it's quite drafty in this old house). But we took advantage of you while you here. We ran. We played. We breathed deeply. We wore new rain boots. We saw promises of what's to come.

Valentine's Day

Our Valentine's Day started out with my Michael making pink heart shaped pancakes for everyone (which I sadly didn't get pictures of). Then it was off to work and school (blah...this is a holiday - why don't we have the day off?!). Linc had a party during preschool and came home with lots of loot - which he generously started passing out to everyone at home. For dinner we made heart shaped bacon cheeseburger sliders and sweet potato fries.

These are my favorite sweet potato fries ever. (I posted about them here). I like the kind of burnt, crispy ones. (Cait & I make good fry eating buddies because I like the crispy and she likes the mushy).


Sliders are the perfect size hamburgers to make for the kiddos. I added some of our spicy ranch mayo to mine. (And dip the fries in it).

I also must share with you that while we were making dinner, Malacai kept begging to eat some of the candy that Lincoln had given him, but we told him he had to wait till after we ate. Soon after, Mike noticed that Cai was MIA - and we spotted him under the table. I asked him what he was doing and he said, "hiding". I asked him why and he said, "so you don't say anything about me being naughty with food". I looked under the table and he had his mouth stuffed full of candy!!! It was so hard to try to scold him while not laughing!!

Also, I must share this little photo shoot that Linc did. Some glasses he scored at his party. I love this kid!

LOVE!

I love Valentine's Day. I love the red. And the pink. And the hearts. And the love. I feel like it's too soon to be Valentine's Day though. I haven't even done any V-Day decorating or crafting or baking. *Sigh* Maybe next year....when I don't have a grumpy, teething baby making me feel like just surviving through the day is about all I can accomplish. I have done plenty of V-Day looking though.

Super Fun

We headed down to the quaint little town of Beaver Falls, right outside of Pittsburgh, where my baby sister lives to spend Superbowlfood Sunday in Steeler country. And to eat some amazing donuts from Oram's. (If you are ever near Pittsburgh, you need to take the trip to Beaver Falls and visit Oram's. Best.Donuts.Ever. It is so worth it. Seriously.) We also made lots of our own yummy snacks to munch on while we watched the game - I'll be sharing the best of those with you.
My in-laws came and stayed with the boys and I'm soo grateful we got the chance to get away for 2 days without the boys. And I'm feeling guilty that they had to put up with baby punk keeping them up all hours. We came home to see that Levi finally, finally has a tooth to show for all his late-night shenanigans. Maybe there is hope that we will, once again, sleep through the night sometime soon.

Fauxstess {Hostess} Cupcakes



We celebrated some birthdays this past Monday at work (and by work I mean my volunteer job at the church). My friend Heidi requested these cupcakes and I was excited to try them. I paired together a couple different recipes to come up with this. I liked the chocolate cupcake base, but I would probably try it with a different recipe next time; I wasn't head over heels for it. The cream filling is very good, it's a 7 minute frosting recipe, but it was not what I was expecting. I had never made it before and wanted to give it a try, but it's pretty much just marshmallow fluff. Didn't know that. I was looking for more of a whipped frosting. Everyone loved it though. The original recipe for the ganache called for bittersweet chocolate but I thought that might be too stong, and I knew Heidi preferred milk chocolate. I wasn't sure if milk chocolate would be too sweet though so I ended up frosting some with milk chocolate and some with semi-sweet (you can see the color difference in the photo below). They were both very good, but I would say if you're trying to get the closest taste to the original Hostess Cupcakes, use milk chocolate.





(We also celebrated Pastor Greg's birthday, but I could not get his name to turn out - I think the frosting was too soft at that point! So that's why his cupcake isn't pictured).

Fauxstess Cupcakes
makes 30-ish cupcakes

For the cupcakes
:
2 sticks of butter, room temp
2 1/2 cups sugar
4 large eggs, room temp
1 1/2 cups flour*
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup unsweetened cocoa powder
1 cup milk
2 teaspoons vanilla

For the cream filling (Seven Minute Frosting)**:
2 large egg whites
1/2 cup sugar
1/4 cup light corn syrup
2 tablespoons water
1 1/2 teaspoons pure vanilla extract

For the ganache:
1/2 cup cream
8 ounces milk or semi-sweet chocolate, finely chopped
2 tablespoons unsalted butter, softened


To make the cupcakes: Preheat the oven to 350 degrees. Line cupcake pans with cupcake liners. Beat butter until softened. Add sugar and beat until light and fluffy, about 3 minutes. Add eggs, one at a time, beating until well combined. Measure the flour, baking powder, baking soda, salt, and cocoa powder into a small sized bowl and whisk to combine. Measure out the milk and vanilla and stir to combine. Add about a third of the dry ingredients to the butter/sugar and beat to combine. Add about a half of the milk/vanilla and beat to combine. Continue adding, alternating between dry and wet and finishing with the dry. Scoop batter into cupcake liners, filling about 1/2 full. Bake cupcakes for about 20 minutes or until a toothpick inserted in the center comes out clean.

While waiting for cupcakes to cool, combine filling ingredients with a pinch of salt in a metal bowl set over a saucepan of simmering water and beat with a handheld electric mixer at high speed until frosting is thick and fluffy, 6 to 7 minutes. Remove bowl from heat and continue to beat until slightly cooled. Reserve 1/2 cup of the filling to use for piping the swirls on top of the cupcakes at the end.

Once cupcakes are completely cooled, use the cone method (this is a great tutorial if you don't know what the cone method is) to fill with filling. I like my cupcakes with a lot of filling, so I made my "cones" as big as I could.

Once all cupcakes are filled, make the ganache. In a small saucepan, heat cream until steaming. Remove from the heat, add chocolate and let stand for 5 minutes. Add the butter and stir until smooth. Frost top of cupcakes with ganache.

Fill a pastry bag fitted with a small plain tip (I used a Wilton 2 tip) with the cream filling and pipe swirls across the center of each cupcake. If your kitchen is warm, you may need to refrigerate the cupcakes for 10 minutes to set the frosting. (My kitchen is a cool 62º in the winter so I just left them on the counter and that worked).

* I used cake flour instead of all purpose flour.

** I doubled this when I made it, but I had a lot left over, so I wouldn't think you would need to double it (and my cupcakes were very well filled).
